2 large eggs

1 tsp vanilla extract
1 1/2 cups chopped apples (Granny Smith or Honeycrisp)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk together eggs, milk, melted butter, and vanilla extract.
- Fold in apples: Pour the wet ingredients into the dry mixture, and gently fold in the chopped apples until just combined. Avoid overmixing.
- Bake: After dividing the batter equally among the muffin cups, bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
