Ingredients
4 large flour tortillas (preferably burrito-sized)
4 large eggs
1 cup of shredded cheddar cheese, or any other type of cheese cup of shredded cheddar cheese, or any other type of cheese
1 cup diced potatoes or hash browns
½ cup cooked sausage crumbles or bacon bits
¼ cup diced onions
Salt and pepper to taste
1 tablespoon butter or cooking oil
Optional toppings: salsa, avocado slices, hot sauce, or sour cream
Instructions
- Cook the Potatoes: Heat a skillet over medium heat. Add a small amount of oil and cook the diced potatoes or hash browns until golden and crispy, about 5-7 minutes. Remove from skillet and set aside.
- Cook the Sausage or Bacon: In the same skillet, add sausage crumbles or diced bacon. Cook for 4–5 minutes, or until browned and beginning to crisp up. Remove and set aside.
- Scramble the Eggs: Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth. Pour the eggs into the skillet and cook, stirring gently, until scrambled and fluffy. Remove from heat.
- Assemble the Burritos: Lay out the tortillas. Divide the scrambled eggs, cooked potatoes, sausage, and shredded cheese evenly among them.
- Wrap and Warm: Fold in the sides of each tortilla, then roll tightly from one end to form a burrito. Place the burritos back in the skillet, seam-side down, and cook until the outside is golden and crisp about 2-3 minutes.
- Serve: Serve warm with your choice of toppings such as salsa, avocado, hot sauce, or a dollop of sour cream.
