- 6 medium potatoes (peeled and thinly sliced)
- 2 cups heavy cream
- 1 ½ cups shredded cheddar cheese
- 1 onion (finely chopped)
- 3 cloves garlic (minced)
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon thyme (optional)
- 2 tablespoons butter (for greasing the dish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
- Prepare the Potatoes: Peel the potatoes and slice them thinly (about 1/8 inch thick). If you have a mandoline slicer, it will make this process quicker and ensure even slices.
- Layer the Potatoes: In the prepared baking dish, create an even layer of potato slices. Sprinkle half of the chopped onion, garlic, salt, and pepper over the potatoes.
- Add Cream and Cheese: Pour half of the cream over the first potato layer. Add half of the shredded cheese on top. Repeat the layers with the remaining potatoes, onions, garlic, cream, and cheese.
- Bake: Bake the dish for forty-five minutes, covered with aluminum foil. After taking off the foil, bake the potatoes for a further 15 to 20 minutes, or until they are fork-tender and the top is brown.

Notes
For a lower-fat option, use milk instead of heavy cream and reduce the cheese by half.
To add a little kick, sprinkle red pepper flakes between the layers.
