Description

This cob loaf recipe features a golden bread bowl filled with a creamy, cheesy mixture. It’s easy to make, versatile, and perfect for any gathering!

Ingredients

Scale
  • 1 round cob loaf (sourdough or your favorite bread)
  • 250g cream cheese, softened
  • 1 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 200g sour cream
  • 200g bacon, diced and cooked until crispy
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp fresh chives, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the cob loaf: Cut the top off the cob loaf and hollow out the center, leaving a thick crust to create a bowl. Set the removed bread aside.Cob Loaf Recipe
  3. Cook the bacon: In a pan over medium heat, cook the diced bacon until crispy. Drain the excess fat and set the bacon aside.
  4. Sauté the onion and garlic: In the same pan, add a little butter and sauté the onion and garlic until soft and fragrant.
  5. Mix the filling: In a large bowl, combine cream cheese, cheddar, mozzarella, sour cream, cooked bacon, sautéed onion, garlic, and fresh chives. Season with salt and pepper.
  6. Fill the cob loaf: Spoon the cheesy filling into the hollowed cob loaf.
  7. Bake: Place the filled cob loaf on a baking tray and bake for 20-25 minutes, or until the filling is bubbly and the bread is golden brown.
  8. Serve: Tear the reserved bread into bite-sized pieces and serve alongside the cob loaf for dipping.

Notes

For a vegetarian version, simply omit the bacon and add more vegetables like spinach or mushrooms.

Adjust the cheeses to your liking; you can use gouda, Parmesan, or even blue cheese for an extra kick.
