A no-bake holiday treat made with puffed rice, dried fruits, coconut, and white chocolate, perfect for a festive dessert or homemade gift.

- 2 cups puffed rice cereal
- 1 cup desiccated coconut
- ½ cup dried cranberries
- ½ cup chopped dried apricots
- 1 cup white chocolate, melted
- 1 tablespoon coconut oil (optional for smoother melting)
- 1 teaspoon vanilla extract
- ¼ cup powdered sugar
- ¼ cup slivered almonds (optional)
Instructions
- Prepare the Dry Ingredients: In a large mixing bowl, combine the puffed rice, desiccated coconut, dried cranberries, apricots, and almonds (if using).
- Melt the White Chocolate: In a microwave-safe bowl, melt the white chocolate and coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
- Combine Wet and Dry Ingredients: Pour the melted white chocolate over the dry ingredients. Add the vanilla extract and powdered sugar. Stir well to coat everything evenly.
- Press the mixture into a Pan: Line a 9×9-inch pan with parchment paper and press the mixture into the pan evenly, smoothing out the top with a spatula.
- Chill: Place the pan in the fridge for at least 2 hours or until the mixture is firm and set.
- Slice and Serve: Once set, remove from the pan and cut into squares or bars. Enjoy!
Notes
This recipe is highly customizable. Feel free to switch out the dried fruits for your favorites, or add nuts for extra crunch.
For a more festive appearance, you can drizzle additional melted white chocolate on top and sprinkle with red and green sprinkles before chilling.
