- 1 pound of chicken breast, skinless and boneless, sliced into little cubes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups of shredded cheese, either Monterey Jack, cheddar, or a combination
- 1/2 cup diced bell peppers (optional)
- 1/2 cup diced onions (optional)
- For frying, use cooking spray or a little oil.
Instructions
- Season the Chicken: In a bowl, combine chili powder, cumin, paprika, and garlic powder with salt and pepper. Add the chicken cubes and toss to coat.
- Prepare the chicken: Heat the olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, until browned and cooked. Remove and set aside.
- Assemble the Quesadilla: Place a tortilla on a clean surface, sprinkle with cheese, add the cooked chicken, bell peppers, and onions if desired, then top with more cheese. Place a second tortilla on top.
- Cook the Quesadilla: Heat a large skillet over medium heat, spray with cooking spray, and carefully transfer the quesadilla to the skillet. Cook till crispy and golden brown, 3–4 minutes per side.
- Slice and Serve: Remove from the skillet, slice into quarters, and serve hot with your favorite sides.
